Taking food orders from home is nothing new to Peachy Cebrero. A professional chef who has worked for top food manufacturing companies such as San Miguel Corporation, she has been running her own company, Peach & Co. Test Kitchen, for the past few years.
Her crispy adobo flakes in tubs are a bestseller, and she accepts orders for party trays as well.
When the pandemic hit, Cebrero found more free time -— just like almost everybody else who had been forced to stay home to keep safe from the virus.
Aside from accepting orders for customized cakes, she thought of tapping into her baking skills and came up with three kinds of cookies, her personal favorites: lemon butter cookies, roasted sesame cookies and peanut butter cookies.
Her lemon butter cookies are light and refreshing. Lemon has health benefits when consumed regularly. The cookies are delicious and addicting, soft but not under-baked, just the way most people like their cookies.
Her roasted sesame cookies are the most unique among the three variants -— they are nutty and crispy.
Peanut butter cookies are perhaps the most familiar among the three. Cebrero made her version chewy and indulgent.
“Cookies are one of the baked products that will never go out of trend,” she says. “The market has a lot of them, but I always see chocolate and matcha variants. Since I developed an allergy from chocolate and anything with caffeine, I decided to come up with cookie variants that will give options to people like me who crave for cookies once in a while, but are always limited to chocolate variants.”

Perfecting the recipe
She had to go through six to eight kitchen tests for each variant to perfect the recipe. And then she sent samples to friends for sensory and taste tests before finally offering them to the market.
She wants everyone to enjoy all flavors of her cookies, so she is selling them in nines, with all variants present in each box, for P150.

“It is like a sampler pack, where you get three pieces each of lemon butter cookies, roasted sesame cookies and peanut butter cookies. Clients can opt to order one variant per box, though,” says Cebrero, who is also developing bars and pastry products that she hopes to introduce to her clients in 2021.
She wants to set up an online patisserie with a full line of products. But until then, enjoy the cookies that she bakes fresh almost every day, depending on the bulk of orders that are coming in.
