Explosion of flavors at Conrad Manila’s Legendary Chefs series

An explosion of Thai flavors await diners at Conrad Manila as its annual Legendary Chefs Series features Akkawin “Pun” Pitrachart of Waldorf Astoria Bangkok.

Known for his culinary prowess in authentic Thai cuisine, chef Pitrachart will be helming the kitchen at Conrad’s Brasserie on 3 until April 30, treating diners to an unforgettable culinary journey for both lunch and dinner.

Pitrachart’s signature creations — including braised chicken in coconut broth, infused with aromatic Thai herbs; stir-fried minced pork with fiery bird’s eye chili and fragrant hot basil; Thai-style roasted beef and flavorful northern Thai sausages, among other local delights — will transport guests to the bustling streets of Bangkok.

“We are delighted to welcome Chef Akkawin Pitrachart to Brasserie on 3, where he will orchestrate an extraordinary culinary experience for our esteemed guests. This collaboration not only brings the rich and vibrant flaVors of Thailand to Manila but also showcases the exceptional talent of Chef Pun from the esteemed Waldorf Astoria Bangkok,” Conrad Manila general manager Fabio Berto said.

Pitrachart has been chef de cuisine at Waldorf Astoria Bangkok’s Thai restaurant, Front Room, since July 2023.

He embarked on his culinary journey through a seven-month internship at Hotel Maison Pic n Valence (awarded three Michelin stars) and Restaurant L’Oasis in Mandelieu (awarded two Michelin stars) in France. The experience unfolded during his pursuit of a Bachelor’s Degree in Hotel and Tourism Management (Vatel) at Thailand’s Silpakorn University International College as part of a student exchange program.

Post-graduation, Pitrachart started his professional culinary career at InterContinental Hotel Bangkok. With a comprehensive understanding of fundamental cooking techniques spanning Western to Asian cuisine and a deep pride in his Thai heritage, chef Pitrachart found his calling at Front Room.

“As a Thai, I have always held a keen interest in fine dining Thai cuisine. The beauty of Thai culinary art, characterized by its diverse ingredients and the intricate balance of flavors, continues to challenge and inspire me,” Pitrachart said.

Guests can enjoy Brasserie on 3’s Thai-inspired buffet for lunch (11 a.m. to 2:30 p.m.) and dinner (6 p.m. to 10 p.m.), available daily.
